Making a healthy food choice at a hospital is extremely easy today, as many hospitals are posting nutritional information on menu items. A recent health and wellness study conducted by The National Society for Healthcare Foodservice Management states that more than half of the HFM member healthcare facilities provide nutritional information for their non-patient customers.

“We put nutritional values on our menu selections,” says Richard Gibbons, Dining Service Director at Griffin Hospital, Derby, CT. “It sways people to make healthier choices.”

Gibbons says that he has noticed people requesting healthier menu selections for about the last two years. He says it’s a trend that seems to continually increase, which is a good thing.

Gibbons has also made his menu healthier by satisfying the dietary needs of both vegetarians and customers actively trying to reduce their meat intake. His vegetarian options represent about 15 percent of his menu sales currently. Whether it be offering a Morningstar Farms® Garden Veggie Pattie™ or a delicious, fresh salad, taking care of his customers’ health is Gibbons main concern.

Keeping his customers in mind, he also decided to health up his menu by greatly reducing trans fat. “Reducing trans fat was an important decision we made about a year and a half ago. It’s an important topic in healthcare right now, and being a healthcare facility, we are always looking for ways to promote healthy eating and nutrition.”
