One of the most innovative ways Gibbons has revamped his menu is by adding a
locally grown, seasonal vegetable recipe once a week from the hospitals farmers’ market.
“We have a farmers’ market every Friday in front of our hospital, and it has been very popular.
It promotes wellness by eating fresh fruits and vegetables, as well as promotes locally grown products.”
He goes on to say, “The best part is it influences people to grab an apple instead of a quick
candy bar in the gift shop!”
